French Toast Rollups

1 pkg. (8 oz.) cream cheese, softened
1 egg yolk
1 c. sugar
24 slices white bread
1 T. cinnamon
3 T. melted butter

In med. bowl, beat cream cheese, egg yolk and 1/4 c. sugar till smooth; set aside. Cut crust off each slice of bread, roll out each slice with rolling pin. Spread cream cheese mixture over bread evenly. Roll up jelly roll style and place seam side down on baking sheet. In shallow dish, mix remaining ¾ c. sugar and cinnamon. Brush butter on rollups then roll in cinnamon sugar mixture until completely coated. Cover and freeze for at least 2 hrs. or up to 2 month. Just before serving, preheat oven to 400 degrees. Bake rollups 10-12 mins. or until golden brown. Serve with maple syrup.
