Cooking class teaches new ways to use chocolate

WINCHESTER -- Good news for chocoholics of the Northern Shenandoah Valley: Chocolate can be a part of a main course, no longer reserved for dessert. At least that's how Adam Policinski, executive chef at Le Papillon Day Resort in Winchester, sees it.

Le Papillon is teaming up with Lord Fairfax Community College's Workforce Solutions to present a series of cooking classes, and will kick off the series with the Cooking Chocolate Class.

The class is "mostly focused on cooking savory with chocolate," Policinski says. It will "focus on looking at chocolate from a different angle than just a sweet [treat]."

Though he would not go into detail about what types of meals the class will cover, he did stress that participants will be able to make all the food from scratch. He explains that many people think of chocolate as a treat to be enjoyed only on occasion and not as a part of a meal. He wants to help dispel those assumptions.

Le Papillon, which opened in Winchester last year, is a day resort, which includes spa services, acupuncture and Chinese medicine, yoga and Pilates classes and a host of events throughout the year. Its Web site, www.lepapillondayresort.com, boasts, "From the moment you enter you will be pampered."

"It's just a real nice place," says Christine Kriz, coordinator of industry training for the LFCC Workforce Solutions.

"This is our first time partnering with them, this semester," Kriz says. In the past, the school has offered cooking classes at its Middletown campus, but, in the attempt to reach out to more residents around the region, Workforce Solutions has begun offering classes at other locations.

The Cooking Chocolate Class will be held at Le Papillon on Saturday from 11 a.m. to 1 p.m. The cost is $79.

"We have not held a cooking chocolate class before," she says, adding that she was interested in the idea.

Future classes will include Cooking Breads and Soups on Feb. 26, Cooking Pasta on March 26, and the Advanced Cooking Skills Class throughout April and May, all of which will take place at Le Papillon.

Kriz says that participants in the Cooking Chocolate Class can expect to make "the world's best chocolate," such as truffles and chocolate pasta.

"He is a wonderful chef," she says of Policinski.

She encourages those interested to sign up as soon as possible, since space is limited and previous classes have been very popular.

"People should come with a pretty open mind," Policinski says. Participants can expect to use chocolate in ways they never have before, he says, and learn "some different ways to implement it into savory dishes."
