Broccoli Casserole

2 (10 oz.) packages frozen broccoli
1 c. shredded sharp cheese
1 c. mayonnaise
1/2 c. milk
1 can of cream of mushroom soup
2 T. minced onion
2 beaten eggs
Salt and pepper to taste
1 sleeve Ritz crackers
3 T. melted butter

Mix all of the ingredients together and pour into a long flat baking dish. Top with crushed Ritz crackers mixed with melted butter. Bake at 350 for 45 minutes. You can make the casserole lower calorie by using fat free shredded cheese, mayonnaise and milk, and omitting the Ritz crackers with butter.
