Caramel Icing

2 c. brown sugar
5 T. evaporated milk
1 stick butter
1 tsp. baking powder
1 tsp. pure vanilla extract

Combine the brown sugar, evaporated milk and butter in a saucepan on top of stove. Bring to a boil for 2 minutes only. Remove from heat, add the baking powder and vanilla. Beat with a wooden spoon until ready to spread. This is delicious on a white or yellow sheet cake. My mother-in-law always said the secret was using a wooden spoon.
