Carrot Cake

3 eggs
2 c. sugar
2 c. grated carrots
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 T. cinnamon
1 ½ c. cooking oil
1 small can crushed pineapple

Cream eggs & sugar until smooth. Add remaining ingredients and mix well. Pour into a greased tube cake pan. Bake at 350 degrees for 40-55 minutes or until toothpick that is inserted comes out clean.

Frosting:
2/3 - 1 stick of butter
6-8 oz. cream cheese
¾ - 1 box confectioners sugar
2-4 tsp. vanilla

Cream all together and beat well. Pour onto cool cake.
