Chocolate Coconut Squares

2 c. sugar
½ c. water
4 T. corn syrup
4 squares (4 ozs.) chocolate, melted
2 ½ c. grated coconut
2 tsp. vanilla
1 T. butter
Butter an 8 inch pan. Combine the sugar, water, corn syrup and chocolate in a saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn heat down and cook, stirring frequently, until it reaches softball stage (236 degrees). Cool to lukewarm. Stir in coconut. Add vanilla and butter and beat until thick and creamy. Pour into pan. When cold, cut into squares. Makes 1 ½ lbs.
