Healthy, Healthy, Chili

Using a Dutch Oven or Stock Pot, saute in 1 T. oil for 5 minutes:
1 large onion, chopped
3 carrots, sliced
4 stalks celery, chopped
2 medium zucchini, chopped

Add:
1 pkg. sliced mushrooms
1 lb. extra lean ground beef and cook for 10 minutes

Add:
1 pkg. mild taco seasoning
1 pkg. mild chili seasoning
1 T. ground cumin
1 T. ground chili powder
¼ c. sugar or Splenda
1 (28 oz.) can diced tomatoes
1 lb. (10 oz.) jar Ragu (Traditional) rinse jar with 2 c. water and add:
2 (15 oz.) cans black beans (rinsed & drained)
½ c. smooth peanut butter
add salt & pepper to taste
Cook until veggies are slightly crisp.

Serves 8
