Lemon Poppy Seed Muffins
2 c. biscuit baking mix
In a large bowl, combine the baking mix, pudding, poppy seeds and lemon peel. In another bowl, combine the eggs, milk and oil; stir in dry ingredients just until moistened. Fill paper lined muffin cups two-thirds full. Bake at 375 degrees for 20-25 minutes. Cool for 5 minutes before removing from pan. In a small bowl, combine sugar and lemon juice; drizzle over muffins. Makes 1 dozen.
