Pineapple Yogurt Muffins

2 c. biscuit mix
½ c. coconut
¼ - ¾ c. sugar
½ tsp. baking soda
¼ c. melted butter
1 egg, slightly beaten
½ c. crushed drained pineapple

Mix biscuit mix, sugar, soda and coconut. Add the remaining ingredients. Batter will be slightly lumpy. Bake at 400 degrees for 15 minutes. Glaze with a mixture of lemon juice, powdered sugar and grated lemon peel.
