Potato Ham & Cheese Bake

Serves 8

¾ c. powdered coffee creamer
1 ¾ c. water
3 T. flour
3 T. butter
2 tsp. paprika
1 tsp. salt
3T. Butter
2 tsp. paprika
1 tsp. salt
3 T. minced onion
6 medium potatoes, peeled & sliced thin
2 c. smoked cooked ham, torn into small pieces
2 c. shredded sharp cheddar cheese

Heat oven to 350 degrees. Spray a 12x9x2 baking dish with cooking spray. Melt butter in a saucepan, stir in onion, salt, paprika and flour. This will be thick. In a small bowl, whisk water and coffee creamer until smooth. Pour this mixture into your flour mixture, bringing to a boil and cook until thickened. Layer ham and potatoes in baking dish, pour hot mixture evenly over them. Cover with aluminum foil and bake for 25 minutes. Uncover and bake 50 minutes. Sprinkle cheese over mixture and bake until melted and light brown.
