2 T. oil
4 small boneless chicken breast halves (1 lb.)
1 onion chopped
1 green pepper chopped
1 c. thick and chunky salsa
1 (14 oz) can corn (drained)
1 (14 oz) can black beans
1 Spanish rice packet
1 (10 oz) can diced tomatoes and green chilies
Half cup of shredded Mozzarella cheese
Cook chicken until thoroughly done in oil with onions and peppers.
Prepare Spanish rice - following packet directions. Combine and mix well; chicken, onions, peppers, Spanish rice, salsa, black beans, and tomatoes and green chilies in a greased large baking dish. Sprinkle with mozzarella cheese, cover with tin foil and bake @ 350 degrees for 30 minutes.
