Sweet Potato Bake

3 c. mashed sweet potatoes
2 eggs
½ c. sugar
¼ c. half and half cream
¼ c. softened butter
2 tsp. vanilla extract
1/8 tsp. salt

Topping
½ c. brown sugar
2 T. flour
¼ c. cold butter

Grease a 11x7x2 baking dish and preheat oven to 350 degrees. In a large bowl, combine the mashed sweet potatoes, eggs, sugar, half and half, butter, vanilla extract, and salt. Beat until light and fluffy, place sweet potatoes into baking dish. Mix brown sugar & flour in bowl and cut in the butter until crumbly and sprinkle over sweet potato mixture. Bake uncovered for 30-35 minutes or until knife inserted near the center comes out clean.
