Western Potato Rounds

2 large unpeeled potatoes
1 c. shredded Colby Jack cheese
crumbled bacon (I use bacon bits)
1/3 c. green onion sliced
1/4 c. barbecue sauce

Preheat oven to 450. Slice potatoes into 1/4" slices. Brush both sides with oil. Place on baking sheet and bake for 20 minutes. Remove from oven and brush with barbecue sauce; sprinkle with bacon bits, green onion and cheese. Return to oven 3-5 minutes until cheese is melted. Makes 24
