Banana Cake

In a large bowl add:

1/2 c. shortening
2 eggs (unbeaten)
1 tsp. vanilla
1 1/2 c. sugar

Beat for 1 minute and add:
1/2 c. buttermilk and beat for 1 minute

Sift together:
2 c. flour
1/2 tsp. baking powder
3/4 tsp. soda
1/2 tsp. salt

Add to first mixture and beat 1 minute. Add 2 large or 3 small bananas sliced thin and beat until all ingredients are mixed well. Pour into (2) 9 inch pans which are greased and floured. Bake in 350 degree oven for 25-30 minutes. Cool in pan for 10 minutes. Remove from pan to cooling racks to cool. Use powder sugar icing to frost. You can also use banana slices between layers and on top of cake.
