Bison Burgers

1 lb. ground bison
1 egg
1/2 c. dry oatmeal
3/8 - 1/2 c. Feta cheese, finely crumbled
salt & pepper to taste
Mix all ingredients thoroughly. Shape into five (5) burgers. Preheat grill to 400 degrees. Place burgers on grill; reduce heat to 350. Cook on one side 9-10 minutes; flip burgers; cook 6 minutes on other side. These times are for well-done burgers. Turn burgers only once, twice at most and do not pierce or "pat" while cooking.
Notes: Bison is a very low-fat meat; overcooking will cause it to be dry. Experiment by substituting Blue Cheese if you prefer, and/or adding minced garlic. If possible, consider leaving the mixture to sit for a while, from an hour to overnight in the fridge. Do not let bison thaw to room temperature.
