Chicken & Black Bean Chili
1 lb. boneless chicken breasts, cut in bite-size pieces OR Heat 2 T. of oil in pan. Add chicken or turkey and cook until no longer pink. Remove from pan and set aside. In same pan, saute green peppers, onions and garlic until tender. Put chicken back in pan with vegetables. Add remaining ingredients (except cheese). Simmer for 30 minutes.
