Chicken & Black Bean Chili

1 lb. boneless chicken breasts, cut in bite-size pieces OR
1 lb. ground turkey
2 T. oil
1 c. green pepper, chopped
1 c. onion, chopped
2 cloves minced garlic
2 (28 oz.) cans diced tomatoes
2 (15 oz.) cans black beans
2 (15 oz.) cans whole kernel corn, drained
12 oz. beer
2 T. red wine vinegar
1 tsp. salt
2 T. chili powder
2 tsp. oregano
2 tsp. cumin
1/2 tsp. pepper
1/2 tsp. hot sauce
2 bay leaves
shredded cheddar cheese

Heat 2 T. of oil in pan. Add chicken or turkey and cook until no longer pink. Remove from pan and set aside. In same pan, saute green peppers, onions and garlic until tender. Put chicken back in pan with vegetables. Add remaining ingredients (except cheese). Simmer for 30 minutes. Serve with grated cheese if desired.
