Fried Green Beans

Serves 8-10

2 1/2 c. flour, divided
1 tsp. salt
1 tsp. ground black pepper
1 (12 oz.) bottle light beer
peanut oil for frying
2 (8 oz.) pkgs. Frozen French-style green beans OR whole green beans; thawed and rinsed. Can use fresh beans
Spicy Dipping Sauce (recipe below)

In a medium bowl, whisk together 1 1/2 c. flour, salt and pepper. Add beer, whisking until smooth. In a large dutch oven or large frying pan, pour oil to a depth of four inches. Heat oil to 375 degrees. In a shallow dish, place remaining one cup flour. Dredge green beans in flour. Dip coated green beans into beer mixture. Fry green beans, in batches, if necessary, for 3-4 minutes per batch, or until browned and crispy. Remove from oil, and drain on paper towels. Serve immediately with Spicy Dipping Sauce.

Spicy Dipping Sauce:
Makes 3/4 cup
1/2 c. mayonnaise
1/3 c. sour cream
1 T. soy sauce
1 tsp. fresh lime juice
1/2 tsp. crushed red pepper

In a small bowl, combine all ingredients. Cover and refrigerate.
