3 medium-large tomatoes, that just turned pink from green color of skin
1 c. flour
salt (kosher) to taste
black pepper to taste
Slice tomatoes 1/2 inch thick all the way through. Pre-heat big skillet with oil and bacon grease. Mix flour, salt and black pepper. Dredge tomatoes on both sides in flour mixture. Fry slices in hot oil til the flour mix turns golden brown, turn once. Drain slices on paper towels and eat em up wile warm. Do not serve cold. It's a delicious treat, simple and homegrown. Can dip into blue cheese or ranch dressing.
