Lemon-Dijon Chicken Breasts

4 boneless/skinless chicken breasts
1/2 c. fine, dry bread crumbs
2 tsp. grated lemon rind
3 T. lemon juice
2 T. Dijon mustard
1 T. lime juice

Combine bread crumbs and lemon rind. Combine lemon juice, mustard and lime juice. Brush the lemon juice, mustard and lime mixture over both sides of the chicken breasts and then dredge in the bread crumb and lemon rind mixture. Place in a baking dish coated with cooking spray. Bake uncovered at 375 degrees for approximately 15 minutes - turn and continue to bake until done.
