Raw Apple Cake

Serves 8

1 1/2 c. Crisco oil
2 c. sugar
4 eggs
3 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
3 c. raw diced apples
1 T. lemon juice
1 c. raisins
1 c. chopped nuts (pecans preferred)

Cream oil and sugar, add eggs and dry ingredients and vanilla. Mix well, batter will be thick. Pour lemon juice over apples. Add nuts and raisins and fold into mixture. Bake one (l) hour or until done in a greased and floured tube pan at 350 degrees.
