Rice Pudding

2 c. rice
2 eggs
1/2 c. milk
1 1/2 c. sugar or less
2 tsp. vanilla
yellow food coloring - optional

Wash rice four (4) times or more; cook according to directions from box and until all water is dry. Mix eggs, milk, sugar, and food coloring (optional). You can add nutmeg to rice. If too thick, add more milk. You can mix in Cool Whip when pudding is cool.
