Spanish Rice

3 1/2 c. water
2 1/2 c. white rice
2 T. butter
Pinch of salt
Pinch of parsley
2 (13 oz.) jars of salsa
1/2 c. onion
shredded cheese

Boil water; add white rice, butter and salt. Let all these ingredients boil until rice is tender. Stir rice, add parsley. Pour rice into a bowl, add salsa and onion. Mix all ingredients, pour into a baking dish. Top off with shredded cheese. Bake 350 degrees for 25-30 minutes.
