Texas Caviar

1 can black beans
1 can black-eyed peas
1 can shoe peg corn
1 jar pimentos
1 can chopped chilies or banana peppers
1 c. chopped celery
1/2 c. chopped red onion
Put all ingredients in a colander and rinse well. In a saucepan, mix together:
1 c. olive oil
1 c. sugar
1/2 c. apple cider vinegar

Warm over medium heat to dissolve sugar and then pour over bean mixture. Let marinade overnight and drain to serve. Enjoy with your favorite corn chips!
