The Best Ever Southern Spoonbread

Serves 6-8
2 c. boiling water
1 c. milk
1 T. shortening
1 tsp. salt
1 c. plain cornmeal
2 eggs, separated

Mix water, cornmeal, salt and shortening. Cool, add milk and beaten egg yolks. Fold in stiffly beaten egg whites. Pour into an 8x8 greased baking dish and bake in a 400 degree oven for 30-40 minutes. Serve from dish while hot.
