Tisket-A-Tasket, Potatoes In A Basket

Serves 6

3 c. mashed, cooked or canned yams
1/2 tsp. grated lemon rind
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
2 well beaten eggs
brown sugar to taste
6 medium oranges

Combine all ingredients except oranges and mix thoroughly. Cut tops off oranges in zig-zag style. Leave shells intact. Remove pulp. Fill the scooped-out orange with yam mixture; use some of the pulp if the mixture is too thick. Bake at 350 degrees for 25-30 minutes. Top with half of a nut (walnut or pecan) or a marshmallow the last 2 minutes.
