Toby's Tomato Pie

2 c. Bisquick
2/3 c. milk
Tomatoes (peeled and sliced enough to make 2 layers (four large or five medium size)
2 T. each, fresh chopped basil and finely sliced onion
1 c. mayo
1 c. sharp cheese, grated
salt & pepper to taste
bacon bits

Mix Bisquick and milk. Press into 1" pie plate (9" round) that has been lightly greased. Layer tomato slices and in between layers sprinkle onions, basil, salt & pepper to taste. Mix cheese and mayo and spread over top. Bake at 400 degrees for 30 minutes. Can be made ahead and reheated.

Note: chicken or ham can be used in between layers, too. It's best to have everything ready and spread out before you begin, and have the oven hot. Also, I have found that for the icing (mayo & cheese), that if you take a teaspoonful and dot it all over first, then connect the dots, it works fine.
