Toby's Tomato Pie
2 c. Bisquick Mix Bisquick and milk. Press into 1" pie plate (9" round) that has been lightly greased. Layer tomato slices and in between layers sprinkle onions, basil, salt & pepper to taste. Mix cheese and mayo and spread over top. Bake at 400 degrees for 30 minutes. Can be made ahead and reheated. Note: chicken or ham can be used in between layers, too. It's best to have everything ready and spread out before you begin, and have the oven hot. Also, I have found that for the icing (mayo & cheese), that if you take a teaspoonful and dot it all over first, then connect the dots, it works fine.
