Vegetable Squash Fritters

2 c. peeled, grated raw squash
1 small finely chopped onion
2 tsp. sugar
1 tsp. salt
pepper to taste
6 T. flour
2 eggs, beaten
2 T. melted butter

Combine squash, onion, sugar, salt, pepper and flour. Beat eggs and add to squash mixture. Add butter. Drop by tablespoonsful onto oiled griddle and brown lightly. Turn and brown on other side. Serve immediately.
