Vidalia Onion & Potato Casserole

Serves 4-6

4 med. Idaho potatoes
3 lg. vidalia onions
1 c. Ranch salad dressing
1 c. grated cheddar cheese

Slice and peel potatoes; cook in a saucepan with 1/2 c. water until tender. Drain, slice onion. Layer cooked potatoes and onions into a 10x13 inch glass baking dish that has been sprayed with a non-stick cooking spray. Pour Ranch dressing over potatoes and onions. Sprinkle cheese over top. Cover and bake in a 350 degree oven for about 15-20 minutes. Remove cover and bake 5 minutes more to brown.

Note: When vidalia onions are not available, regular onions will work. Cook the onions a few minutes in saucepan or microwave before putting in casserole.
