Zucchini Fritters

2 c. grated zucchini
1/2 medium onion, grated
2 eggs, beaten
1/2 c. grated Parmesan cheese
1/4 tsp. pepper
chopped parsley
flour
oil

Combine ingredients, adding enough flour to hold shape when dropped by tablespoons into hot, shallow oil. Brown on both sides; drain on paper towels. Serve immediately or reheat in oven. Delicious dipped in Honey Dijon dressing.
