Apple-Cheddar Salad

1/4 c. apple cider
2 T cider vinegar
1 tsp. honey
1/4 tsp. salt
1/8 tsp. coarsely ground black pepper
2 Romaine Hearts chopped
1 lb. (2 to 3 medium) Pink Lady,
Honey Crisp, or Empire apples,
cored and thinly sliced
toasted chopped walnuts
shredded Cheddar cheese

Combine apple cider, cider vinegar, honey, salt and pepper in a small bowl. Mix well.
Put the romaine hearts and the apples together in a large bowl. Pour the cider mixture over the lettuce and apples. Toss until they're thoroughly coated. Garnish with cheese and walnuts.
