Apple Walnut Pudding

1 egg
3/4 c. white sugar
1/3 c. flour
1 1/4 tsp. baking powder
1/8 tsp. salt
1/2 c. chopped apples
1/2 c. chopped walnuts
1 tsp. vanilla

Beat egg, well; add sugar, beat until light and creamy. Sift together flour, baking powder and salt. Add ingredients to egg mixture and beat well. Fold in apples and nuts. Stir vanilla in gently. Pour into greased 1 qt. baking dish and bake 325ยบ for 30 minutes. Serve with whipped cream. May flavor whipped cream with
2 T. rum if you like. This dessert is also great topped with vanilla ice cream.
