Baked Chicken Casserole

1 cut up fryer chicken
Buttermilk - enough to cover chicken
Flour - to roll chicken in
1/2 tsp. poultry seasoning
salt & pepper to taste
Oil to fry
1 c. rice
1 c. cream of chicken soup
1 c. milk
Soak chicken in buttermilk overnight. Drain when ready to fry. Roll in flour mixed with seasonings and fry until done. In a 9x13 pan mix rice, soup and milk; arrange fried chicken pieces on top. Cover and bake for 1 hour at 350. You can also add onion, peas and carrots.
