Baked Spare Ribs and Sauerkraut
3 lbs. pork spare ribs cut into pieces
Place ribs in a heavy baking pan; sprinkle with salt, pepper and paprika. Bake 325º for 1 hour. Turn the pieces after 30 minutes and brown other side. Drain off all the fat; add onions and water. Add shredded potatoes and sauerkraut; spread over ribs. Add 1 c. water. Bake at 325º an additional 1 1/2 hours. Stir occasionally to keep ribs from drying or sticking to pan.
Suggestion: Serve with mashed potatoes and applesauce.
