Chicken Meatball Appetizers

Yield: 2 1/2 dozen
2 1/2 c. minced cooked chicken breast
3 T. finely chopped onion
3 T. finely chopped celery
2 T. finely chopped carrot
2 T. dry bread crumbs
1 egg white
1/2 tsp. poultry seasoning
pinch pepper

In a bowl, combine all ingredients; mix well. Shape into 3/4 inch balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400ยบ for 8-10 minutes or until lightly brown. Can eat plain or dip in mustard.
