Makes about 2 dozen balls
Mix dates, sugar, egg, vanilla and butter in large saucepan. Cook over low heat and stir until butter and sugar are melted. Continue cooking over low heat for another 10 minutes stirring constantly to avoid burning. Add Rice Krispies and walnuts and continue to cook for another 5 minutes. Remove from heat and cool for a few minutes. Use a spoonful of mixture and roll in hand to form a ball, then roll balls in coconut. May use colored coconut if desired.
