Cranberry Orange Bread

2 c. all purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1 egg, beaten
1/2 c. orange juice
Grated rind of 1 orange
2 T. melted butter or margarine
2 T. hot water
1 c. raw whole cranberries
1 c. coarsely chopped walnuts

Combine flour, baking powder, soda, salt and sugar in large mixing bowl; set aside. Mix beaten egg with orange juice, rind, butter and hot water. Fold flour mixture into egg mixture until blended. Do not beat. Gently fold in cranberries and walnuts. Spoon into greased 9x5x3 loaf pan or smaller pans of choice. Bake at 325ยบ for 60 minutes; test in center with wooden toothpick. Cool on rack for 15 minutes before removing from pan.
