Orange Tapioca Salad
3 c. water
In a large saucepan, add water and mixes. Heat to boiling, while stirring constantly. Reduce heat to low, continue stirring. Continue cooking and stirring until mixture thickens about 2-4 minutes. Remove from heat. Cool 10 minutes in pan. Stir in frozen Cool Whip. The Cool Whip will not be melted. That is normal. Gently stir in oranges and extract. Pour into a pretty glass serving bowl. Cover with plastic wrap and place in refrigerator overnight. Before serving, stir gently.
