Peanut Butter Kiss Cookies

Yield: about 2 1/2 dozen cookies
1 c. all-purpose flour
1 tsp. baking soda
1/8 tsp. salt
1/2 c. firmly packed brown sugar
1/4 c. sugar
1 c. smooth peanut butter
1/2 c. butter, softened
1 large egg
1/2 tsp. vanilla extract

Sift together flour, soda and salt; set aside. Combine sugars in large mixing bowl.
Add peanut butter and butter; beat until smooth and creamy. Add egg and vanilla; mix well. Gradually beat in flour mixture just until blended. Refrigerate, covered, at least 1 hour. Preheat oven to 375º . Shape dough into 1-inch balls. Place on ungreased cookie sheets 1 1/2 inches apart. Bake 10 to 12 minutes until lightly browned and set. Remove from oven, press kiss in center. Cool on cookie sheet until firm enough to lift. Transfer to wire racks to cool completely.
