Pimento Cheese

Yield: 2 1/2 - 3 c.
1 (3 oz.) pkg. cream cheese
1 c. grated Monterey Jack cheese
1 c. grated sharp Cheddar cheese
Black pepper to taste
1/2 c. mayonnaise
2-3 T. mashed pimentos
1 T. grated onion (optional)

Beat cheeses with mixer until fluffy. Add remaining ingredients and beat until well blended.
