Pumpkin Spice Cake

Serves 16-20
1 pkg. (18 1/4 oz.) spice cake mix
3 eggs
1 c. cooked or canned pumpkin
1/2 c. water
1/2 c. vegetable oil
1 pkg. (3.4 oz.) instant vanilla
pudding mix
1 tsp. ground cinnamon
1/2 c. chopped pecans
favorite cream cheese frosting or
whipped cream

In a mixing bowl, combine cake mix, eggs, pumpkin, water, oil, pudding mix and cinnamon. Beat at medium speed for 5 minutes. Stir in pecans. Pour into a greased and floured 10 in. fluted tube pan. Bake at 350ยบ for 45-55 minutes or until cake tests done. Let cool in pan 10 minutes before removing to a wire rack. Frost cake or serve with whipped cream.
