Shenandoah Valley Apple Cake
5 c. peeled and chopped Shenandoah Preheat oven to 350º In large bowl mix apples with brown and white sugars and cinnamon; set aside. In a separate bowl beat eggs and add oil and vanilla. In a large mixing bowl combine flour, baking soda and salt. Add dried plums (or raisins) and pecans to the flour mixture. Add wet ingredients and apple mixture to the flour mixture and mix just until all ingredients are blended. Bake in a greased bundt pan at 350º for 1 hour or until inserted toothpick comes out clean. Cool in the pan for 1/2 hour before turning out into a cake platter. Cool completely before cutting. Good served with vanilla ice cream.
