Wisconsin Potato Patties

Serves 12
4 c. cold mashed potatoes
1/2 c. light cream
12 soda crackers, crushed (about 1/2 c.)
1/4 c. minced onion
1 egg, slightly beaten
1/4 tsp. celery salt
1/4 tsp. pepper
1/8 tsp. garlic salt

Grease a griddle and preheat on medium heat. In a bowl combine potatoes, cream, cracker crumbs, onion, eggs, celery salt, pepper and garlic salt. Shape mixture into (12) 1/2 in. thick patties. Cook on prepared griddle until brown on bottom and warm. Turn and cook 3 to 4 minutes more or until brown. Keep warm in a 300ยบ oven while cooking remaining patties.
