2-3 apples (gala, fuji, cameo, etc)
2-3 T lemon juice
1/4 c. honey (more if needed)
cinnamon, for sprinkling
Cut apples into thin slices and place into a bowl. Sprinkle with lemon juice, about 1 T. per apple, and toss. Place apples on a serving tray with sides (so the honey doesn't run off). Drizzle honey over apples--to taste. Make sure every apple has enough honey on it to please your palate. Sift cinnamon over honeyed apples. Nota bene: a screened tea infuser works really well for sifting cinnamon onto the apples. Serve immediately.
