Apples With Honey & Cinnamon

2-3 apples (gala, fuji, cameo, etc)
2-3 T lemon juice
1/4 c. honey (more if needed)
cinnamon, for sprinkling

Cut apples into thin slices and place into a bowl. Sprinkle with lemon juice, about 1 T. per apple, and toss. Place apples on a serving tray with sides (so the honey doesn’t run off). Drizzle honey over apples–to taste. Make sure every apple has enough honey on it to please your palate. Sift cinnamon over honeyed apples. Nota bene: a screened tea infuser works really well for sifting cinnamon onto the apples. Serve immediately.
