Best Homemade Pumpkin Pie

1 ¼ c. fresh pumpkin puree
¾ c. sugar
½ tsp. salt
¼ tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. flour
¼ tsp. nutmeg
2 eggs, lightly beaten
1 c. evaporated milk, undiluted
2 T. water
½ tsp. vanilla extract
1 unbaked pastry shell (9-inch)

Combine pumpkin, sugar, salt, spices and flour in medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, vanilla and mix well. Pour into pastry lined pie pan. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake about 35 minutes longer or until center is set.
