Cheesy Beef Roll-Ups

8-10 lg. (10″) flour tortillas
1 lb. thinly sliced roast beef (or chipped roast beef)
1 lb. shredded cheddar cheese
1 (8 oz.) tub cream cheese w/chives & onions
1 lb. cole slaw

Spread each flour tortilla with the cream cheese. Lay sliced beef on top, sprinkle with a thin layer of shredded cheese and top that with 2 T. cole slaw. Roll up tightly and secure with a toothpick. Let chill thoroughly.
Cut into 2 or 3 serving pieces. Great with soup or chips for lunch.
