Cherry (Cottage) Pudding

(Old time recipe from the Shenandoah Valley over 120 years old)

Dry Ingredients: Sift together
1½ c. flour
2 tsp. baking powder
Dash of salt
½ c. of sugar

Wet Ingredients: Mix together
1 egg, well beaten
½ c. milk
½ stick margarine or butter, melted

Stir the wet ingredients in to the dry ingredients. Add 2 c. of pitted cherries to the mixture, distributing evenly in the batter. Set oven at 350 degrees. Pour into a butter shallow pan 8×8. Bake until brown 20 -30 mins. Serve warm with whipped cream, or chocolate sauce or as we did as children pour milk over a slice in a bowl and add sugar and enjoy!
