Chicken & Sausage “With Tomatoes”

3-4 links Italian sweet sausage
1 pkg. boneless chicken breasts – approximately 3 cut in ½
2-3 cloves garlic, crushed
2 c. sliced onions (rings separated)
1 (7 oz.) jar roasted red peppers (cut in strips)
1 (28 oz.) can crushed tomatoes
1 T. olive oil (brown sausage)
1 1/2 tsp. basil leaves (fresh if available)
1 tsp. oregano leaves (fresh is available)
½ tsp. salt
1/8 tsp. ground pepper
¼ c. red wine (optional)

Heat oil. Brown sausage. Remove to paper towel. Leave 3 T. fat in pan – pour off extra. Need to add olive oil to (3 T) cook. Add onions & garlic. Saute until light brown. Remove. Add chicken to pan; few pieces at a time. Brown all sides. Remove to plate and reserve. Take browned sausage, onions and chicken and arrange into pan. Pour tomatoes over all. Add basil, oregano, salt & pepper (wine optional) Simmer, covered, until chicken and sausage are cooked well – about 40 mins.; add roasted peppers, too. Uncover and increase heat. Sauce becomes a bit thicker (10 mins.) Serve over pasta noodles or rice or as is in shallow bowl. Yield: 6 portions (hardy) or 8
