Fresh Apple Cake
4 c. peeled and finely diced apples
Place the diced apples, sugar, canola oil, and nuts in a large mixing bowl and let set to bring out the juices in the apples. Stir every 15-20 mins. Let set for an hour. At the end of the hour continue adding the ingredients to the cake batter - flour, spices, etc. Beat for a few minutes and then pour into a greased and floured bundt pan (or tube pan) Bake at 350 degrees for 1 hr. 10 mins. or until toothpick comes out clean. Cool in the pan for 10 mins. removed to a wire rack and cool completely. Delicious and moist!
