German Potato Salad

Serves 6

2 lbs. red potatoes
6 thick slices bacon
½ c. finely chopped onion
1/3 c. vinegar
1/3 c. water
1 tsp. sugar
½ tsp. pepper

Cook potatoes in boiling water to cover; 15 mins. or until tender. Drain. Cool slightly; peel and slice potatoes. Place in a bowl - set aside. Cook bacon in a skillet. Crumble bacon - set aside. Saute onion in drippings until tender; stir in vinegar, water, sugar and pepper - cook 1 min. Add bacon and cook until heated. Pour over potatoes; toss gently. Serve immediately.
